The chef chooses the omakase pieces based on the types of fish, as well as the change in flavours throughout the omakase experience.

If you wish to order additional pieces after enjoying the omakase, you may order from a separate menu on our website.

We strive to be prepared with several types of fish available so that you can enjoy the Edomae sushi to the fullest.

The taste varies greatly depending on the sushi chef and the way the chef makes and shapes the nigiri.

It is a specialized skill when a sushi chef makes sushi in a fast manner. The chef strives to make the nigiri carefully but quickly for each one of you so that you can enjoy the nigiri at the most optimal time.

It is not an exaggeration to say our job mainly consists of preparation. We strive and aim for the ultimate sushi with minimal accompaniments by thinking how we can bring out the natural umami flavour of the fish. We call this subtraction style in traditional Japanese cooking.

In Japanese eating culture, it is critical to bring out the natural flavours and strength of the ingredients, which is supported by its traditions.

Edomae style sushi was created when there was no refrigerator in the Edo era.

We place value and focus everyday in preparation so that we can come up with creative ways to prepare and age fish with modern scientific technology.

We carefully select and import ingredients such as sushi rice, vinegar, soy sauce, sea salt with kelp so that you can taste the umami flavour of the ingredients themselves.

We consider and appreciate all ingredients as bounties of nature, therefore, we never waste the ingredients as we use them for miso soup, tsume for anago (homemade anago sauce), nikiri-shoyu (homemade soy sauce), and for all parts of omakase that we serve today.

Our nigiri sushi is simple without any unnecessary decoration, however, we strive to place value and try out various new cooking techniques in preparation until we serve at night.

It is not easy to be prepared with several types of fish everyday, however, we came up with and serve with this style of only nigiri sushi because we want our customers to know and enjoy traditional Edomae style sushi.
