“莫久来” is a type of salted delicacy made from “赤ホヤ” (red sea pineapple) and the intestines of sea cucumber called “このわた” (konowata). The unique name of “莫久来” is derived from the resemblance of the shape of the sea pineapple to a “depth charge.” It is prepared by carefully processing and salting the intestines of sea cucumber, then combining them with fresh red sea pineapple. Despite its simple preparation method, the exquisite balance of flavors in “莫久来” is unmatched by anything else.
